Make your next gathering special with this easy prep roasted lamb and baked scalloped potatoes.

Ingredients

  • 1 5lb leg of lamb
  • 1 tbsp salt
  • 1 tsp black pepper
  • ½ cup olive oil
  • 2 Tbsp fresh rosemary chopped
  • 3-4 garlic cloves minced
  • 1 Tbsp lemon zest
  • (2) 20oz packages Main St Bistro® Scalloped Potatoes

Instructions

  1. Remove meat from the refrigerator and let it come to room temperature for 1 hour. 
  2. Prepare marinade combining olive oil, rosemary, garlic, and lemon zest.
  3. Season meat with salt and black pepper; then cover with marinade and let it rest for another 30 minutes. 
  4. Preheat oven to 400 degrees F. 
  5. Place meat in a baking pan with a rack and roast for 30 minutes at 400F. 
  6. Lower oven temperature to 350F, then continue cooking for another hour and a half and check the roast temperature with a meat thermometer. For medium rare, internal meal temperature should be 135-140F. 
  7. During last 15 minutes of cooking, heat Main St Bistro Scalloped Potatoes in oven per package directions.
  8. Let the roast rest for 15 minutes before slicing. 
  9. Slice and serve with Main St Bistro Baked Scalloped Potatoes and your favorite green vegetable for a memorable meal.
