Macaroni & Cheese Jalapeno Poppers

Cook these poppers in the air fryer for a quick and easy appetizer that's sure to please.

Ingredients

  • 15-20 large jalapenos
  • 1 20oz package Main St Bistro® Signature Macaroni & Cheese
  • 1/2 cup breadcrumbs
  • 1/2 cup bacon bits
  • 1/2 cup sharp cheddar cheese
  • 1 bunch chopped cilantro for garnish
  • Salt to taste
  • Lime Crema for dipping

Instructions

  1. Lay the jalapenos flat, and cut out a triangle shape from the top. Scoop out the pith and seeds, creating a boat. On the underside, cut a thin slice to make a flat surface so they can easily lay flat. Rinse with cold water and set aside to dry.
  2. Toppings: mix breadcrumbs, bacon bits, and cheddar cheese together in a small bowl. Set aside.
  3. In a medium sized bowl, mix just half of the toppings into the macaroni & cheese. Reserve remaining toppings.
  4. When the jalapeno boats are dry, season lightly with salt.
  5. Fill each of boats with 1-2 ozs of the macaroni & cheese mixture.
  6. Using the remaining toppings to top the filled jalapeno boats and carefully place onto an air fryer tray.
  7. Air fry at 350 for 10-15 minutes. Let cool for 2 minutes before serving.
  8. Garnish with chopped cilantro and/or Lime Crema.
