Easy and flavorful blackened salmon with roasted potatoes can be made any time of year.

Ingredients

  • 2 salmon fillets
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp yellow curry
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1.5 tsp all-purpose seasoning
  • 1 sprig of thyme
  • 1 tbls of butter, melted
  • lemon slices
  • (1) 17oz package Main St Bistro® Garlic & Rosemary Roasted Potatoes

Instructions

    1. Prepare salmon fillets thoroughly (remove bones and descale) and remove skin.
    2. Pat dry both salmon fillets, then brush with melted butter on each side.
    3. Mix all seasonings (chili, onion, garlic, curry, paprika, cayenne powder, black pepper and
      all-purpose seasoning) together on a plate.
    4. Take each salmon fillet and coat with the seasoning mixture.
    5. Add salmon fillets to a cast iron pan and sear for 3 minutes on each side.
    6. Add thyme and a squeeze of lemon to pan.
    7. Heat Main St Bistro Roasted Garlic & Rosemary Potatoes per package directions.
    8. Plate salmon fillets and potatoes, serve and enjoy!
