Delicious, comforting and impressive short ribs

Ingredients

  • 4 lbs bone in short ribs
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 2 tablespoons avocado oil, divided
  • 4 inch piece fresh ginger, peeled and diced
  • 4 cloves garlic, sliced
  • 1 cup beef stock
  • 1/3 cup low sodium soy sauce
  • 1/2 cup brown sugar
  • 2 tablespoons chili oil
  • Sesame oil, for serving
  • Sesame seeds, for serving
  • Diced Chives, for serving
  • Main St Bistro® Twice Baked Signature Potatoes

Instructions

    1. Pat short ribs dry. Season with salt and black pepper.
    2. In a large Dutch oven or braiser, heat 2 tablespoons avocado oil over medium heat until shimmering. Add short ribs to the pot, avoiding overcrowding, and working in batches if necessary. Sear for 4 minutes per side, until browned. Transfer short ribs to a plate and set aside.
    3. Add ginger and garlic to the pot and stir until fragrant, about one minute. Add beef stock, soy sauce, brown sugar, and chili oil to the pot, stirring until combined.
    4. Bring liquid to a boil and add short ribs back to the pot, nestling in the liquid. Reduce heat to low and braise for 3 hours, until the short ribs are tender enough to fall off the bone.
    5. Top with sesame oil, sesame seeds, and diced chives and serve with Main St Bistro® Twice Baked Signature Potatoes.
