Basil & Mint Pesto Crusted Salmon

Bright in flavor and in color, this mint and basil pesto crusted salmon is the show stopping fish dish that will beautifully complete your Easter spread.

Ingredients

  • 1/2 cup walnut halves
  • 1 cup parmesan (shredded)
  • 2 cups fresh basil (leaves only, no stems)
  • 1/4 cup fresh mint (leaves only, no stems)
  • 1 lb salmon filet
  • 1 tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp vegetable oil (for coating your frying pan)
  • (1) 20 oz package Main St Bistro® Scalloped Potatoes

Instructions

  1. For the pesto crust, combine walnuts, parmesan, basil, and mint in your food processor. Process until you have an even crumble—approx 1 min.
  2. Preheat your oven to 350 degrees F.
  3. Drizzle your olive oil over your salmon. Gently rub it on to the fish.
  4. Sprinkle salt and pepper to taste over your salmon.
  5. Use your hands to press an even layer of your pesto mixture over the top of your salmon filet. You can elect to coat the sides as well if you'd like.
  6. Transfer your crusted salmon skin-side down to your non-stick baking sheet.
  7. Bake until your salmon has an internal temperature of 135 degrees F or 145 degrees F if you prefer it on the drier side.
  8. Let your fish sit for 5 minutes to rest before serving.
  9. While your fish is resting, heat Main St Bistro Scalloped Potatoes per package instructions
  10. Serve together and enjoy!
