Fresh take on a classic

Ingredients

  • 2 tablespoons olive oil
  • 4 filet steaks
  • 1 tablespoon coarse salt
  • 2 teaspoons freshly cracked black pepper
  • 1 cup carrot top greens
  • 1/2 cup Fresh Parsley, minced
  • 1/2 cup Fresh Cilantro, minced
  • 1/2 cup Extra Virgin Olive Oil
  • 2 Tbsp. Red Wine Vinegar
  • 1/2 Tsp. Red Pepper Flakes
  • 2 garlic cloves, minced
  • Pinch of Salt
  • (1) Main St Bistro® Signature Mashed Potatoes

Instructions

  1. Pat steaks dry. Season both sides with coarse sea salt and black pepper.
  2. Heat a large cast iron pan over medium-high heat. Allow pan to heat for at least 3-4 minutes. Add olive oil and steaks to the pan and sear for 2-3 minutes per side, until a crust is formed, and the steak is done to your liking.
  3. Remove steak from the pan and allow it to rest for at least 10 minutes.
  4. While steak is resting, combine the chimichurri sauce ingredients in a small bowl. Stir well.
  5. Slice the steak and top with the chimichurri sauce.
  6. Heat Main St Bistro Signature Mashed Potatoes per package instructions and serve.
