Embrace spring with these quick and fun chicken skewers!


  • 1/2 cup diced Italian parsley, plus more for serving
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/4 teaspoon red pepper flakes
  • 4 chicken breasts, pounded thin
  • 4 slices prosciutto, ripped
  • 4 slices mozzarella cheese
  • 1 cup breadcrumbs
  • 4 tablespoons olive oil
  • Fresh oregano, for serving
  • Lemon wedges, for serving

    1. Combine diced Italian parsley, grated parmesan cheese, salt, cracked black pepper, and red pepper flakes in a small bowl.
    2. Lay chicken breasts flat. Top with prosciutto, a slice of mozzarella cheese, and a spoonful of the herb mixture.
    3. Slice chicken widthwise in 1” strips and place them on a skewer. Dip the chicken in bread crumbs and set aside.
    4. Heat a large pan over medium heat. Add olive oil until shimmering. Add chicken and cook 6-8 minutes per side, until golden brown and cooked through. Top with chopped Italian parsley, oregano, and lemon wedges.
    5. Heat Main St Bistro® Twice Baked Signature Potatoes per package instructions.
