Ingredients

  • 1 ½ pounds large shrimp, peel and deveined
  • 4 tablespoons butter
  • 4 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 4 cloves garlic, minced
  • ¼ cup white wine
  • 3 – 4 tablespoons fresh lime juice
  • ½ cup cilantro, chopped
  • Salt and pepper to taste
  • Lime slices for serving

Instructions

    1. In a large bowl, add shrimp, 1 tablespoon olive oil, chili powder, cumin, paprika, coriander and cayenne pepper and stir to combine and marinate for at least 10 minutes
    2. Melt one tablespoon butter in one tablespoon olive oil in a large skillet over medium-low heat then increase heat to medium-high
    3. Once very hot and sizzling, add shrimp in a single layer and cook approximately 2-3 minutes per side, or just until opaque and cooked through. Transfer cooked shrimp to a plate and set aside
    4. In the same skillet over medium heat, add remaining butter, olive oil and garlic and cook for about 1 minute until fragrant
    5. Add wine and bring the sauce to a simmer until slightly reduced, about two minutes. Remove from heat and add the cilantro and lime juice and stir to combine
    6. Add shrimp back to the skillet and stir to evenly coat
    7. Serve with Main St Bistro Macaroni & Cheese
