Classic Roast Beef with Twice Baked Potatoes

Elegant roast beef with creamy horseradish sauce.

Ingredients

Roast:

  • 2 - 2-5lb Roast (sirloin, prime rib, or rib eye)
  • salt & pepper
  • 2 tbsp olive oil
  • 1 package Main St Bistro® Twice Baked Potatoes
  • Rosemary for garnish

Creamy Horseradish Sauce

  • 1 cup sour cream
  • ½ cup mayonnaise
  • 2 tbsp horseradish, straight/prepared
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • Sea salt & black pepper - to taste

Instructions

  1. Trim beef of any unwanted fat.  
  2. Allow beef rest on counter, covered, until it rises to room temperature, approx. 20- 30 min.
  3. Rub with olive oil and season all over with salt & pepper or favorite rub.    
  4. Heat pan on medium-high to high heat. 
  5. Sear beef on all sides in pan until browned, approx. 2 minutes per side.
  6. Place beef in deep baking dish and roast at 350 degrees approx. 30 minutes or until internal temp reaches 125 degrees.
  7. Remove from oven and let beef rest on counter 20 minutes uncovered.
  8. While resting, whisk together all ingredients of the Creamy Horse Radish sauce and heat Main St Bistro Twice Baked Potatoes per package directions.
  9. Slice beef, garnish with rosemary.
  10. Serve with sauce and Twice Baked Potatoes and a green salad for a delicous special occasion meal.
