Ingredients

  • • 1–1½ lb salmon filet
  • • 2 cups fresh cranberries
  • • 1 navel orange, thinly sliced
  • • 1 Cara Cara orange, thinly sliced
  • • 1 blood orange, thinly sliced
  • • Fresh rosemary sprigs
  • • Salt and pepper
  • 1 package of Main St Bistro® Baked Scalloped Potatoes
  • For the miso honey orange glaze:
  • • 2 tbsp white miso paste
  • • 2 tbsp honey
  • • ¼ cup fresh orange juice (use a mix of the citrus you’re slicing)
  • • 1 tbsp orange zest
  • • 1 tbsp olive oil

Instructions

  1. Preheat oven to 325°F
  2. Arrange a few slices of mixed oranges (navel, Cara Cara, blood orange) on the bottom of a baking dish to form a citrus bed.
  3. Place the salmon filet directly on top of the citrus slices and scatter fresh cranberries around the salmon
  4. Whisk together, miso, honey, orange juice, orange zest, olive oil until smooth, glossy, and pourable.
  5. Spoon the glaze all over the salmon and season with salt and pepper. Then layer colorful oranges slices over salmon. Add rosemary and cranberries around salmon.
  6. Bake 25-30 minutes, depending on salmon thickness.
  7. While salmon bakes, heat Main St Bistro® Baked Scalloped Potatoes according to package instructions.
  8. If desired, broil the top for 1–2 minutes to caramelize the citrus edges and glaze.
  9. Enjoy!
