Ingredients

  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 6oz filet mignon Steaks, at room temperature
  • 3 tablespoons unsalted butter, divided
  • 1/3 cup crumbled blue cheese, plus more for serving
  • 1/2 cup heavy cream
  • 1/2 teaspoon horseradish
  • 1 teaspoon Worcestershire sauce
  • Pinch of salt and pepper
  • Chopped Italian parsley, for serving
  • 1 package Main St Bistro® Twice Baked Potatoes

Instructions

  1. Heat a large cast iron skillet over medium-high heat. Season both sides of steaks with salt and pepper.
  2. Add 2 tablespoons of butter and steaks to the pan. Sear 4-5 minutes per side, until the internal temperature reaches 120F. Set aside to rest.
  3. While steaks are resting, heat Twice Baked Potatoes per package directions.
  4. Heat butter in a small saucepan over low heat. Add blue cheese and heavy cream, stirring until blue cheese melts.
  5. Add horseradish, Worcestershire sauce, and a pinch of salt and pepper to the saucepan. Stir well for 2-3 minutes until thickened. 
  6. Top steaks with blue cheese sauce and chopped parsley and serve with Twice Baked Potatoes.
