This whole chicken with fresh herbs is an easy way to serve the whole family a juicy, flavor-packed meal.


  • whole chicken
  • ⅔ cup lemon juice (bottled)
  • 1 cup white vinegar
  • 1 whole lemon
  • 2 tbsp of all-purpose seasoning
  • 1 tbsp of black pepper
  • 1 tbsp of onion powder
  • 1 tbsp of garlic powder
  • ½ cup of unsalted butter
  • 1 tbsp of olive oil
  • 6 garlic cloves minced
  • 1 tbsp of chopped rosemary
  • 1 tbsp of chopped parsley
  • 1 tbsp of chopped thyme
  • 1 head of garlic
  • 6 sprigs of rosemary
  • 3 sprigs of parsley
  • 3 sprigs of thyme
  • 1 tsp of cloves
  • (1) 24 oz. package of Main St Bistro® Signature Mashed Potatoes


  1. Fill a shallow glass pan with the lemon juice and vinegar.
  2. Rinse the chicken thoroughly under cold running water, then set into the lemon & vinegar mixture. Let soak for 15 mins.
  3. Preheat oven to 425°F.
  4. Pat chicken dry, then rub the entire chicken with lemon. Season with all-purpose seasoning, black pepper, onion powder, garlic powder. 
  5. Microwave butter in a small bowl until melted, then add olive oil, minced garlic, chopped rosemary, chopped parsley, and chopped thyme. Drizzle mixture over entire chicken. 
  6. Stuff chicken cavity with the cloves, garlic head, rosemary, thyme, and parsley sprigs.
  7. Roast chicken in oven until the internal chicken temperature reaches 165°F (approx 1 hr & 20 mins). Baste half way through to maintain moisture. 
  8. Set oven to broil and broil the chicken until skin is golden and crisp (approx 10 mins).
  9. Once done, remove from the oven and let rest, covered,  for 10 mins. Heat Main St Bistro® Signature Mashed Potatoes per package directions
  10. Serve together and enjoy!
