Grilled Balsamic Chicken & Tomato and Peach Salsa

Grilled chicken with tomato & peach salsa served over creamy mashed potatoes is a fresh and satisfying taste of summer.


  • 2 boneless & skinless chicken breasts
  • 2 tablespoons honey
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • salt & pepper, to taste
  • 1 cup diced cherry tomatoes
  • 1 cup diced peaches
  • feta cheese, to garnish
  • fresh basil, to garnish
  • (1) 24oz package Main St Bistro® Signature Mashed Potatoes


    1. Preheat oven or grill to 350(f) degrees.
    2. Whisk together honey, balsamic, olive oil, salt & pepper, reserving 2 tablespoons of marinade for the salsa.
    3. Toss chicken breast in marinade & let stand for a minimum of 30 minutes.
    4. Bake or grill until the chicken is cooked throughout.
    5. Let rest for 5 minutes before slicing.
    6. While resting, heat Main St Bistro Signature Mashed Potatoes for 5 minutes in microwave per package directions.
    7. In a separate mixing bowl, stir together the reserved 2 tablespoons of marinade, diced tomatoes & peaches.
    8. To each plate add a layer of mashed potatoes, followed by the sliced chicken & salsa.  Garnish with cheese & basil.
