A fresh flavorful summer meal


  • 12 oz salmon cubed
  • 1 tbsp fresh scallions chopped for serving
  • Lemon wedges for serving
  • 1 package Main St Bistro® Baked Macaroni & Cheese
  • For the marinade:
  • 1/2 cup buffalo sauce
  • 2 tbsp butter
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • For the blue cheese sauce:
  • 3 tbsp mayonnaise
  • 3 tbsp sour cream


    1. In a small saucepan, add all ingredients for the marinade. Simmer for 2-3 minutes and let it cool.
    2. Transfer cubed salmon into a bowl. Pour half of the marinade and toss to combine. Let marinate for 30 minutes.
    3. In the meantime, heat the Main St Bistro® Baked Macaroni & Cheese as per package instructions.
    4. In a small bowl combine all ingredients for blue cheese sauce. Refrigerate until ready to serve.
    5. Skewer the marinated salmon slices into soaked skewers.
    6. Preheat the grill or you can use a grill pan. Slightly oil the grill or the pan. Lay salmon skewers at an angle on the grill grates and cook 2-3 minutes or until you see grill marks. Flip and brush with the marinade and cook for another 2-3 minutes. 
    7. Serve the buffalo salmon skewers with blue cheese sauce, chopped scallions, lemon wedges and a side of Main St Bistro® Baked Macaroni & Cheese.
