A quick and easy vegetarian meal

Ingredients

  • 1 eggplant, sliced in 1/2-inch rounds
  • 6 portobello mushrooms
  • 1/2 cup olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh Italian parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes
  • Main St Bistro® Baked Macaroni and Cheese

Instructions

  1. Preheat the grill to medium-low heat. 
  2. In a large bowl, combine olive oil, garlic, Italian parsley, basil, balsamic vinegar, salt, black pepper, and red pepper flakes. Add sliced eggplant and portobello mushrooms. Marinate for 10 minutes, while the grill preheats. 
  3. Grill for 5 minutes per side. Remove from the grill and serve immediately with Main St Bistro® Baked Macaroni and Cheese.
