Italian Crusted Pork Loin

With just a few ingredients, this pork dish is great for busy weeknights.


  • 3 lb pork loin roast
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • (1) 24oz package Main St Bistro® Signature Mashed Potatoes


  1. Preheat oven to 450 degrees F.
  2. Rub pork with olive oil and place on a lined baking tray.
  3. Combine garlic, oregano, basil, and thyme in a small bowl. Mix and rub over pork.
  4. Bake for 25 minutes, or until the pork reaches an internal temperature of 145 degrees F.
  5. Heat Main St Bistro Signature Mashed Potatoes for 5 minutes in microwave per package directions.
  6. Serve and enjoy.
