This easy pot roast in a crock pot makes for the most tender, fall apart meat and a stress-free dinner.


  • 2-3 lb chuck roast
  • 2 tbsp olive oil
  • Salt & black pepper
  • 1 yellow onion, peeled & cut into large slices
  • 6 garlic cloves, chopped
  • 1 cup beef broth
  • ¼ cup red wine
  • 1 tbsp dried Italian seasoning
  • 4 medium carrots, peeled & cut into 1-inch pieces
  • 2 ½ tbsp cornstarch
  • 3 tbsp beef broth
  • 1 tbsp minced fresh parsley
  • (1) 24 oz. package Main St Bistro® Signature Mashed Potatoes


  1. Rub chuck roast with 1 tbsp olive oil and season to taste with salt and pepper. 
  2. Add 1 tbsp olive oil to a large pan on medium-high and brown the meat on all sides.
  3. Create a cornstarch slurry - in a small bowl combine 2 ½ tbsp cornstarch with 3 tbsp beef broth and mix well.
  4. To a crock pot, add onion, garlic, beef broth, red wine, italian seasoning, carrots, and cornstarch slurry. 
  5. Cook on low for 8 hours, or until roast is fall-apart tender.
  6. Heat Main St Bistro® Signature Mashed Potatoes per package directions.
  7. Serve separate or enjoy the pot roast on top of the creamy mashed potatoes. Garnish with fresh parsley.
