Ingredients

  • 1/3 cup pumpkin purée
  • 1/3 cup dark maple syrup
  • 1 tsp minced ginger
  • 1/4 tsp ground nutmeg
  • (1) cinnamon stick
  • 2 tbsps unsalted butter, cut into quarters
  • 2 lbs bone-in chicken thighs
  • 2 tbsps extra virgin olive oil
  • salt & pepper
  • 1 package Main St Bistro® Twice Baked Potatoes

Instructions

MAPLE PUMPKIN BUTTER GLAZE

  1. Pre-heat oven to 425 degrees.
  2. In medium saucepan, over medium heat, whisk together pumpkin purée, maple syrup, ginger, nutmeg, and cinnamon stick until evenly incorporated and warm.
  3. Whisk in butter until fully incorporated.
  4. Remove from heat.

CHICKEN

  1. Thoroughly dry your chicken.
  2. Line a large baking sheet with foil.
  3. Season both sides of chicken with salt and pepper. Lightly pat it in.
  4. Use a silicone brush to coat chicken in a layer of the maple pumpkin butter glaze.
  5. Gently brush on a layer of the extra virgin olive oil.
  6. Bake uncovered on baking sheet for 15 minutes.
  7. Remove from oven, and brush on the remaining maple pumpkin butter glaze.
  8. Bake for 10 more minutes or until chicken temperature reaches reads 165-170 degrees.
  9. Let the chicken sit for 5 minutes before serving. This will allow it to get extra juicy.
  10. While chicken rests, heat Main St Bistro Twice Baked Potatoes per package directions.
    Serve and enjoy!
