Ingredients

  • 1 package Main St Bistro® Seasoned Signature Macaroni
  • 1 tbsp butter or oil
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 1 jalapeño, diced
  • 2 cups corn kernels
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Cotija cheese, for topping
  • Tajín, for topping
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

    1. Heat the mac and cheese according to package directions.
    2. In a skillet, sauté the onion, garlic, jalapeño, and corn in butter or oil until softened and slightly charred, about 6–8 minutes.
    3. Season with chili powder, smoked paprika, salt, and pepper.
    4. Stir the corn mixture and shredded cheese into the warm mac and cheese until creamy and combined.
    5. Top with cotija, Tajín, cilantro, and a squeeze of fresh lime before serving.
