Enjoy this tangy, mustard crusted lamb around the holiday table with your loved ones.

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp thyme, chopped
  • 1 tbsp rosemary, chopped
  • 1 tbsp sage, chopped
  • 2 lb rack of lamb
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/4 cup Dijon mustard
  • (1) 20 oz. package Main St Bistro® Baked Scalloped Potatoes

Instructions

    1. Preheat oven to 425 F.
    2. Combine olive oil, thyme, rosemary, and sage in a small
      bowl.
    3. Pat rack of lamb dry. Season with salt and pepper.
    4. Transfer lamb to a lined baking sheet.  Brush the
      lamb with Dijon mustard, then coat the top with herb mixture.
    5. Roast for 25 minutes, or until the internal temperature
      reaches 145 F.
    6. Let lamb rest covered for 10 minutes.
    7. While lamb is resting, heat Main St Bistro® Baked Scalloped Potatoes per package instructions.
    8. Serve together and enjoy!
