Simple and delicious roasted Cornish Hens with oranges and rosemary.

Ingredients

  • 3 Cornish hens (1.5 lb each)
  • 1 tbsp salt ½ tsp black pepper
  • ¼ cup orange juice
  • 2 oranges, sliced
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • ¼ cup olive oil
  • 2-3 sprigs fresh rosemary
  • (2) 20oz packages Main St Bistro® Baked Macaroni & Cheese

Instructions

  1. Preheat oven to 400 F degrees.
  2. Pat dry the Cornish hens and season well with salt and black pepper.
  3. In a bowl combine the olive oil, orange juice, honey, and Dijon mustard.
  4. In a baking dish, make a bed with sliced oranges and fresh rosemary.
  5. Place the Cornish hens over the oranges.
  6. Pour the marinade over the Cornish hens. Make sure the hens are well coated with the marinade.
  7. Roast for 10-15 minutes on high temperature, and then lower temperature to 350F degrees and bake for another hour or until they reach an interior temperature of 165F degrees.
  8. If they are turning a little too brown, cover with aluminum foil during baking.
  9. Remove for oven and let rest for 10-15 minutes
  10. While resting, heat the Main St Bistro® Baked Macaroni & Cheese in the oven or microwave per package instructions.
  11. Serve and enjoy!
