A date night dinner favorite that's both impressive and easy!
2 5 oz Filet mignons
1 tablespoon coarse salt
1 tablespoon freshly cracked black pepper
1 tablespoon olive oil
2 tablespoons butter
2 sprigs rosemary
(1) 17oz package Main St Bistro® Garlic & Rosemary Roasted Potatoes
Pat filets dry. Season liberally with salt and pepper on both sides.
Heat a cast iron skillet over medium-high heat. Add olive oil to the skillet. When shimmering, add filets to the pan and cook 3 minutes per side, or until the internal temperature reaches 135F for medium rare.
During the last two minutes of cooking, add butter and rosemary to the skillet.
Spoon the butter over the steaks and remove from the pan.
Let steaks rest for 10 minutes. While resting, heat Main St Bistro Roasted Potatoes per package directions.
