This chicken with spicy, citrusy, garlicky sauce pairs easily with restaurant-quality sides.


  • 1 lbs boneless skinless chicken thighs, cubed
  • 1 medium red bell pepper, chopped
  • 1 shallot, chopped
  • 4 cloves of garlic, smashed
  • 2 dried ancho chiles, rehydrated
  • 2 tablespoons lemon juice, freshly squeezed
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons smoked paprika
  • 2 teaspoons dried oregano
  • 1/2 teaspoon lemon zest (optional)
  • Salt & pepper, to taste
  • (1) 20oz package Main St Bistro® Signature Macaroni & Cheese


  1. Place chicken in a mixing bowl or plastic bag. Season with salt & pepper.
  2. In a food processor or blender, add the pepper, shallot, garlic, chiles, lemon juice, olive oil, paprika, oregano, lemon zest, salt & pepper. Puree until smooth.
  3. Pour mixture over chicken & toss to coat. Refrigerate & marinate for a minimum for 4 hours. 
  4. When ready to cook, preheat grill to 450 degrees F. Thread chicken onto skewers.
  5. Heat Main St Bistro Signature Macaroni & Cheese for 5 minutes in microwave per package directions.
  6. Grill chicken skewers for 2 minutes on each side, until cooked throughout.
  7. Transfer to plate & serve!
