Poached Lobster over Baked Scalloped Potatoes

Easy and satisfying, this buttery poached lobster with cheesy scalloped potatoes is both elegant and delicious.

Ingredients

  • 2 split Maine lobster tails (4-5 oz each)
  • ½ cup butter
  • 1 lemon cut into wedges
  • Fresh parsley chopped
  • Salt and pepper to taste
  • (1) 20oz package Main St Bistro® Baked Scalloped Potatoes

Instructions

  1. Rinse and then split lobster tails in half using kitchen shears (if whole). 
  2. Melt butter in a skillet over low heat. 
  3. Place lobster tails flesh side down in butter and add lemon wedges. 
  4. Simmer for approximately 8-10 minutes, basting shells with the butter while turning occasionally until lobster meat is bright red, firm and opaque. 
  5. Heat Main St Bistro Baked Scalloped Potatoes for 5 minutes in microwave per package directions and let stand for 1 minute before serving in individual casserole dishes. 
  6. Remove lobster meat from shell and cut into bite size pieces and garnish with chopped parsley if desired. 
  7. Spoon buttery lobster pieces over Main St Bistro Baked Scalloped Potatoes and enjoy!
