Make your next gathering special with this easy prep roasted lamb and baked scalloped potatoes.
1 5lb leg of lamb
1 tbsp salt
1 tsp black pepper
½ cup olive oil
2 Tbsp fresh rosemary chopped
3-4 garlic cloves minced
1 Tbsp lemon zest
(2) 20oz packages Main St Bistro® Scalloped Potatoes
Remove meat from the refrigerator and let it come to room temperature for 1 hour.
Prepare marinade combining olive oil, rosemary, garlic, and lemon zest.
Season meat with salt and black pepper; then cover with marinade and let it rest for another 30 minutes.
Preheat oven to 400 degrees F.
Place meat in a baking pan with a rack and roast for 30 minutes at 400F.
Lower oven temperature to 350F, then continue cooking for another hour and a half and check the roast temperature with a meat thermometer. For medium rare, internal meal temperature should be 135-140F.
During last 15 minutes of cooking, heat Main St Bistro Scalloped Potatoes in oven per package directions.
Let the roast rest for 15 minutes before slicing.
