An impressive holiday meal with minimal prep time.

Ingredients

  • 1 - 5lb bone-in pork rib roast, frenched
  • 1 ½ tbsp salt
  • 1 tsp black pepper
  • 1 tbsp fresh thyme minced
  • 1 tbsp fresh rosemary minced
  • 3 cloves of garlic minced
  • 1 tbsp Dijon mustard
  • 1 tbsp old style mustard
  • 1 tbsp lemon zest
  • (2) 20oz package Main St Bistro® Baked Scalloped Potatoes

Instructions

    1. Remove meat from the refrigerator and let it come to room temperature for 1 hour.
    2. In a bowl, combine mustard with herbs, garlic, salt and black pepper.
    3. Rub the mixture all over the pork. Let rest for 30 minutes.
    4. Preheat oven to 375F degrees.
    5. Place meat in a baking pan with a rack and roast for 1 1/2 hour until temperature reaches 145F. Calculate 15-20 minutes per pound.
    6. Remove from the oven, cover with foil and let rest for 15 minutes before cutting.
    7. In the meantime, place the trays of baked scalloped potatoes in a baking dish and heat in the oven as per package instructions. Enjoy!
