Salmon with Lemon Dill Sauce and Rösti

Ingredients

For the Salmon

  • 3 salmon fillets (5–6 oz each)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp paprika

For the Lemon Dill Sauce

  • 1 cup Greek yogurt
  • 2 tbsp fresh chopped dill
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 garlic clove
  • 1/4 tsp salt
  • ⅛ tsp pepper
  • 1 tbsp olive oil

For the Rösti

  • 1 package Main St Bistro® Hash Browns
  • 1 egg
  • 1 cup parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp nutmeg
  • 1 tbsp melted ghee (mixed in)
  • 2–3 tbsp ghee (for frying)

Instructions

  1. Preheat oven to 400°F. Place salmon on a lined baking sheet, drizzle with olive oil and lemon juice, and season with salt, pepper, and paprika. Bake for 10–15 minutes, until tender and just cooked through.
  2. Stir together all ingredients for the sauce and set aside.
  3. In a large bowl, mix the hash browns with egg, salt, pepper, nutmeg, melted ghee, and cheese.
  4. Form into patties and cook in ghee over medium heat for 6–7 minutes per side, until deeply golden and crisp.
  5. Plate rösti with baked salmon, a generous spoonful of sauce, and finish with lemon wedges and a fresh arugula salad on the side.
