Bring summer to a boil with this surf and turf dish

Ingredients

  • 1 package Kielbasa sausage, sliced
  • 1 lb shrimp, cleaned and deveined
  • 1 lb mixed little potatoes, halved
  • 2 ears of corn, cut into 4 pieces each
  • 1 tbsp Cajun seasoning
  • 1 tbsp Old Bay seasoning
  • 3–4 garlic cloves, minced
  • Juice of ½ lemon
  • Salt and black pepper, to taste
  • 1 stick (½ cup) butter, melted
  • 1 tbsp fresh parsley, chopped (for serving)
  • Main St Bistro® Signature Macaroni and Cheese

Instructions

  1. Preheat oven or grill to 425°F 
  2. Bring a large pot of salted water to a boil. Add the halved potatoes and boil for 7–8 minutes. Add corn and continue boiling for 4–5 more minutes. Drain and let cool slightly.
  3. In a large mixing bowl, add the parboiled potatoes, corn, sliced sausage, and shrimp. In a small pot, whisk together the melted butter, Cajun seasoning, Old Bay, minced garlic, salt, and pepper. Drizzle over the mixture and toss everything well until evenly coated.
  4. Divide the mixture evenly among 4 large sheets of heavy-duty foil. Add some fresh parsley and a squeeze of lemon juice. Fold up the sides and seal tightly to create a packet.
  5. Place the foil packs on a preheated grill and cook for 15 minutes, flipping once halfway through. Place foil packs on a baking sheet and bake for 15–18 minutes, until shrimp are pink and fully cooked.
  6. Heat Main St Bistro® Signature Macaroni and Cheese per package instructions.
  7. Carefully open foil packs and sprinkle with fresh parsley. Serve hot, with lemon wedges if desired.
